I didn't finish IV, got seriously bored and didn't really know what I was supposed to do. I liked Fallout 3 though, so hopefully this will be better.
Oblivion was incredible. As long as Bethesda don't use the out-dated game engine used for Oblivion, Fallout 3 and New Vegas i'll be happy.
Oblivion is my most favorite game ever! I've pumped in hundreds of hours into that game with multiple saves and different race/class combos. Like James said, I hope they use a newer engine and keep the bugs to a minimum.
If they could sort out the shooting and aiming in the Fallout games, they'd go down as some of the greatest games of all time. The storyline and game world are always fantastic though.

Enemy scaling? The enemies (you find during free roam) level up as your character levels up as well. It kinda ruins the fun of leveling up as the enemies are always a handful and you never get that sense of power even if your character is at a very high level. It also works the other way. You'll never find an 'impossible' enemy as the enemy's level is always in and around your level. Enemy scaling isn't all bad, but it has to be done sensibly. It was a disaster in Oblivion.
Skyrim is going to use a spanking new game engine ppl Twitter / Bethesda Blog: Seeing lots of speculation ...
Wicked news, the gameplay is spot on (albeit combat is shaky) top graphics and this could well be the greatest RPG of alltime...
